Chicken, leek and lentil casserole
I had some chicken pieces and some leeks to use, so I made this. The
lentils were in the cupboard and I hadn't used any before, so I threw some in! The vegetables can easily be changed if desired.
Serves 3–4. Preparation time: 20 minutes. Cooking time: 1½h.
Ingredients
- Chicken joints
- 1 large onion
- 2 leeks
- 1 potato
- 1 carrot
- 200g lentils
- 2 cloves garlic
- dried mixed herbs
- black peppercorns
- 1 stock cube
- water
Oven method
Set oven to 200°C (fan oven: 180°C)
- Wash chicken, put in casserole
- Dice onion. Chop leeks, potato and carrot into large chunks. Crush garlic. Put it all in the dish
- Add the lentils, some herbs, some peppercorns (6 or so) and stock cube
- Add enough boiling water to nearly cover the meat
- Cook for 1½ hours
Serve with long-grain rice.
