Risotto
Ingredients
- 15ml cooking oil
- 2 tbsp rice
- 1 onion
- 1 carrot
- ½ green pepper
- 3 mushrooms
- 1 stock cube
- 250ml water
- (tomato puree or ½ tin tomatoes)
- portion of cooked meat or prawns
Method
- Heat oil
- Fry vegetables for 5 minutes until soft
- Add rice and fry for 2 minutes
- Add stock cube and water, stir
- Bring to the boil
- (Add tomato puree)
- Add meat
- Turn down to simmer
- Cover and cook for 15 mins
- Serve
